Green Lentil and Bacon Salad

Ingredients

160 g green lentils
400ml water
1 tsp Marmite
4 rashers of streaky bacon
1 onion
1 clove of garlic
2tsp dried oregano
1 400g tin of tomatoes
2 tbs tomato puree
Salt and pepper to taste

Method

Put lentils, water and Marmite in a pan and simmer until the lentils are beginning to soften. This is usually when there appears to be not much moisture left in the pan.

Meanwhile, cut the bacon into small chunks about the size of a couple of lentils and fry gently until crispy. Add the oregano at this stage. Chop the onion and garlic and soften them in the bacon fat after removing the bacon pieces.

Blitz the canned tomatoes and puree in a blender and pour into the serving dish. Add all the other ingredients and season to taste.

 

Brown Lentil and Mushroom Salad

Ingredients

160 g brown lentils
400ml water
1 tsp Marmite
100g mushrooms
Soy sauce to taste
Brown sauce to taste
Salt and pepper to taste

Method

Put lentils, water and Marmite in a pan and simmer until the lentils are beginning to soften. This is usually when there appears to be not much moisture left in the pan.

Meanwhile, cut the mushrooms into small chunks and fry gently. Assemble the ingredients and adjust the sauces until flavoursome.

Green Lentil and Pepper and Celery Salad

Ingredients

160 g green lentils
400ml water
1 tsp Marmite
1 green pepper
4 sticks of celery
Salt and pepper to taste

Method

Put lentils, water and Marmite in a pan and simmer until the lentils are beginning to soften. This is usually when there appears to be not much moisture left in the pan.

Meanwhile, cut the green pepper and celery into small chunks. Assemble and season to taste.

Coconut Dahl

Ingredients

160 g red lentils
400g can of coconut milk
Curry powder
Garam marsala

Method

Put lentils and coconut milk in a pan, add the spices to taste and simmer until the lentils are the consistency you like.
