Gluten Free Brown Sauce


720ml spirit vinegar
1 tbsp mustard powder
200ml water
2 tbsp black treacle
1/2 tsp salt
2 tbsp Muscovado sugar
2 dessert spoons gluten free plain flour
3 tbsp tamarind pulp
3 tomatoes, chopped
60g dates, chopped
4 shallots, chopped
1/2 tsp freshly-grated ginger
4 whole cloves
1 tsp Chinese Five Spice
4 black peppercorns
2 bay leaves
1tsp turmeric
pinch of cayenne pepper
1 star anise
1tsp ground coriander
1 Bramley Apple cored
a little oil for frying



Brown the shallots in the oil.
Place all the ingredients in a pan and cook over a steady heat until thickened - about 40 minutes.  Blend in a food processor.
Push through a fine sieve.
