Honey, Avocado and Lime Ice Cream
500 ml semi skimmed milk
500 ml cream
4 egg yolks
2/3 cup of honey
1 tsp of cornflour
Mashed flesh of two avocados
Zest of 1 lime.
Warm the cream and the milk in a pan.
Whisk the egg yolks, honey and cornflour until the mixture is thick and foamy.
Pour the warm cream mixture on to the honey, egg and cornflour, mix and return to the heat. Stir constantly until the liquid thickens.
Make the ice cream in the usual way. I use an ice cream machine. When the ice cream is just short of setting stir in the mashed avocado and the lime zest and freeze until served.
