Millet, Black Bean, Prawn and Coconut Salad



150 g millet
150g prawns
1 can of Black Beans
1 lemon – rind and juice of
2 red onions
2 tbs desiccated coconut
1 tbs light olive oil
Sal and pepper to taste

Cook the millet to the point where it is done but still has a bite. Whilst it is cooking chop the onions very finely.
Combine all the ingredients.
